Afgan Stews

I will share something I found in a cookbook I got on Afgan recipes. They got some good food over there:) I have been making all the stews for the past week. The ingredients are similiar in each, it may be just a different filling or add something new and make a totally different stew. I, myself, ahve been using chicken though because in my area chicken is cheaper than ground beef or ground lamb.

Kachaloo Quarma (beef and potato stew)
1/4 c. oil
1 onion, chopped
1/2 lb. beef or lamb meat (cut in chunks)
3 potatoes
2 cloves minced garlic
2 lalepeno peppers
1 tsp. turmeric
1/2 c tomato puree
1/2 tsp. ginger
salt
black pepper
1 tsp. coriander
4 c water

Saite chopped onion in oil until onions are brown. Add chopped meat and cook for 5 minutes. Add the rest of the ingredients and cook on medium heat until meat and potatoes are done. And serve over rice.


Anyone else got anything from Afganistan?

yeah it is. That's what I'm noticing about the eastern foods...very filling no matter how simple they are;)

Maybe, maybe not. In my case, it seems it takes longer for potatoes to get soft than the maet to boil and cook up. But I'm sure you could do it any way. (ok now if there are any Afgans in the crowd they may disagree with the "I'm sur eyou could do it any way" :)
