Beef Kabob

I'm trying to recreate the tasty kabobs I've had at resteraunts. I typically use the following ingredients:

-Ground Beef (90/10 leanness)
-Kabob Masala (shaan)
-Garlic/Ginger paste
-Onions
-Green Onions
-Cilantro
-Lemon Juice

However, everytime I put the skewered meat on the bbq, it seems to break apart really easily when i flip them, and they dont have the consistency I'm looking for. I've tried addding flour and breadcrumbs, it helps a little but they still break.

Any ideas what I'm doing wrong?
