need new recipe
hi guys, im losing ideas for creative and easy meals..... any favorites? (not indian pls)
What I like to do is super easy and it has a million and one variations to it.
Grill veggies on the BBQ, quickly marinade them first in Caribbean / Jamaican Jerk Marinade from a bottle. (Next to the salad dressing in any grocery store). You don?t have to do anything complicated just put all the cut veggies and pour some marinade in a big zip lock bag and shake.
Serve veggies over cooked pasta
Sprinkle light olive oil and fresh ground pepper on the pasta, before placing veggies on top.
I find it is easiest to grill with shrimp they are small enough to toss in the bag with the marinade and it takes about the same amount of time to cook. You could also use other fish, meat or chicken. Just marinade separately, grill and serve over the veggies and pasta.
I prefer to use several different colored bell peppers, onion and button mushrooms for color and variety. I also prefer tri-colored pasta such as Rotini or bow ties. Use different colors and textures to make it more appealing. The taste and prices of the pasta are similar, they just look different.
You can also use different kinds of marinades such as Sweet and Sour, BBQ Sauce, Italian dressing, Caesars, etc. Or just a simple mix of olive oil, lemon juice, salt and pepper.
You can also top it with some grated Romano or Parmesan cheese, or maybe crushed red pepper and ever toasted breadcrumbs/croutons. All of this can be bought pre-made and pre-grated.
Tip: It is easiest to use a BBQ tray with holes in it so the small pieces will not fall into the flame, this will also let the smoke flavor get into the food. Using foil will create more of a frying effect (which could be another variation if you want.)
This dish is light, colorful, heart smart and super easy.
