Recipes and favorites
Do you know any good recipes? Do you have any favorite dishes or products? They could be vegan or just plain vegetarian, just as long as they are good ones.
Many indian paki dishes are vegan ex. cholay chaat (mix of chickpeas and tomatoes), saag aloo (spiced spinach with potatoes), dal (lentils), etc. Also Arab dishes like hummus, tahini, fattoush are vegan. The good thing about them is that they aren't processed like some vegan products
Dressing
3 tablespoons raw sesame tahini
1 clove garlic
? cup lemon juice
2 tablespoons apple cider vinegar
1 tablespoon extra-virgin olive oil
1? tablespoons maple syrup, or 2 soft dates, pitted
2 teaspoons dill
1-2 teaspoons sun-dried sea salt, or to taste
Fresh water as needed
Salad
1 apple, diced
3 stalks celery, chopped
2 carrots, shredded
3 green onions, finely chopped to the top
? cup raisins
? cup chopped walnuts
? cup chopped parsley
1 head crisp lettuce, torn
To make the dressing: In a blender, blend tahini, garlic, lemon juice, vinegar, olive oil, maple syrup or dates, dill, and sea salt, adding water 2 tablespoons at a time as necessary to blend until smooth.
To make the salad: Cut apple into quarters and cut out core and seeds. Cut into slices. Chop celery in 1/4-inch pieces along the stalk. Toss together apple, celery, carrots, onions, raisins, walnuts, and parsley. Drizzle in dressing and toss. Serve on a bed of torn lettuce.
VEGAN CAKES & COOKIES! in short, substitue. whenever it says milk, use coconut milk. better make it lite though. like whole milk, regular coconut milk is way high in fat. also replace every 1 egg for 1 cup of apple sauce. this can be done instead of using egg replacer. you know the powder stuff made from rice or seaweed that has the same conistancy as a beat egg when mixed w/ oil. i like the coconut milk and apple sauce combo substitutions over the same old soy everything. plus it gives your baked goods a uniqe and sublte sweatness. you won't need to add much sugar too.
Brown Rice & Lentil Pilaf (p. 168 from The Complete Vegan Cookbook) ~ Ingredients: 2 tbsp olive oil, 1 med. onion (diced), 1/4 tsp dried red chili flakes, 1& 1/2 C uncooked longrain brown rice, 1/3 C dried brown lentils, 3 1/4 C water, 1/2 tsp salt (note: I usually "cheat" and use veggie broth instead of the water and don't add salt), 1 large bay leaf ~ Heat the oil in a large-bottom saucepan and sautee the onion and chili flakes for 5 mins, add the rice and lentils and stir and cook for 5 more mins (DO NOT SKIP THIS PART, IT MAKES IT TASTE GOOD!!!), add the water (or veggie broth), salt, and bay leaf, bring to a boil, reduce heat to low, cover and cook for 50 minutes, remove from the heat and let the pot sit for 5 mins or more WITHOUT REMOVING THE LID :)
My Favourite Tofu Recipe ~ Baked Tofu (p.308 from The Complete Vegan Cookbook, adapted cooking time and temp slightly) ~ Ingredients: 1 pound firm or extra-firm tofu, 1/3 cup veggie broth, 2 tbsp soy sauce, 1 tbsp dark sesame oil, 1 tsp brown rice syrup (can sub maple syrup), 1/2 each of garlic powder, ground ginger, ground cumin ~ Instructions: slice the tofu, wrap it in a clean tea towel, and put a cutting board and some weights (tins of food maybe) on it, leave it for 1/2 hr, mix other ingredients, place tofu in a baking dish, pour marinade over it and marinate for 1hr-1day, flipping once, bake at 350 deg F for approx. 45 mins :) Eat it either plain, in a stir-fry, in a sandwich, etc....
Here's a good recipe site with lots of vegan ones and reviews too :) vegetarian.allrecipes.com beware that there's lots of vegan recipes in the "regular veggie" section too :)
I also really like "Tofu Scrambler," it's an awesome spice mix in the perfect amount to mix with a pkg of mashed tofu. Great for breakfast with toast, or in a breakfast burrito with salsa :) They stopped selling it here though :( Alhamdulillah I'm moving to a larger city soon, inshaAllah!
My favourite "cheese" is Veganrella :) It's not available near where I live, which is good because then I'd eat too much of it, and it has like zero nutritional value...but as a treat I like it, and I buy it when I'm out west to visit friends, and sometimes they mail it to me for a present (I know that's a bit weird)! :)
