Thanksgiving turkey


What is the biggest turkey you've roasted for Thanksgiving? The guest list has grown..and now I'm feeding about 14 people... so I guess I"ll have to make at least 18 pounds... though they really say 1.5 lbs/person.... I've just never made a turkey bigger than 14 lbs before... I'm worried the breast meat will get too dry... but everyone loves Thanksgiving turkey.. there is nothing worse than running out of food...

Anyone try to roast two turkey's side by side in the same oven? I could try doing two 10 lb turkeys...

And a lot of recipes recommend brining...but it is a lot of work it seems... they suggest using Kosher salt...so shouldn't a Kosher turkey be the same as brining? But if that is the case, why doesn't everyone just buy Kosher and skip the brining at home?

The secret to notmaking a dry turkey is;

Cook it in the oven, uncovered at a high tempreture.

A lot of people make the mistake ofcooking turkey in foil. This is a mistake. This traps steam inside the foil. Steam breaks down fat and grease. This is why steam cleaners work so well.

Cooking the turkey uncovered allows the steam to escape. Cook the turkey at a higher tempreture too.

Follow this principle and your turkey will be juicy and flavourful every time.
